Cooking and I Go Back and Forth

Sometimes I enjoy it, and sometimes I don’t. I’m talking about cooking.

I’m back on a it is good to cook, it’s cheaper and in the long run, better for me. 

Not that oil soaked chicken cutlets fit the bill, but on a night that it’s dark at 4:30, out came the frying pan. I learned to make these by watching my Pop, and I haven’t had any complaints yet.

Here is my recipe:

  • 3 Chicken breasts, cut thin then hammered down,
  • Market Basket Italian Bread crumbs
  • 6 eggs
  • Canola Oil
  • Locatelli grated Parisian cheese
Let the breasts soak in the eggs for a bit, maybe go on Facebook or type an email or two while you wait. I thought I would extend the favor of blogging this recipe while I am killing time as they soak in the eggs.
 
Some use flour, I dont and mine are outstanding. Cost the cutlets in the bread crumbs, then in the frying pan they go at half heat, using TWO FORKS to flip them. I like them better them tongs.
 
When golden brown, but not too dark, take em out. Cut one on half to see if white all the way through, snack on that one if good. Put the rest on a paper plat in paper towel so oil can soak.
 
Boil some noodles and enjoy!
