Kristin’s Chocolate Macaroons (AKA: Puffy Chocolaty Coconut Dream Cloud Cookies)

Is it possible to take a nibble of heaven? If so, I bet it tastes like these dreamy, fluffy, chocolaty, coconut macaroons my friend Kristen brought into  work the other day! These cookies were like warm snugly little teddy bears!

If you don’t like coconut,  chocolate,  puffy clouds of happiness, you can stop reading here.

On the other hand, if you believe in the magic of delightfully  delectable confections, please try this recipe for the lightest, most angelic and dreamy cookies that will ever let melt in your mouth!

Kristen’s Chocolate Macaroons  (AKA: Puffy Chocolaty Coconut Dream Cloud Cookies)

WHAT YOU NEED:

 4 – 1 ounce squares of semi-sweet chocolate (or 2/3 cup semi-sweet chocolate chips)

2 – 1 oounce squares of unsweetened chocolate

2 egg whites

1/2 cup sugar

1 tsp vanilla

1/2 lb coconut (just over 1/2 a bag which is annoyingly 14 ounces)

 

GET TO WORK:

Preheat oven to 375

Melt the chocolate and cool
Beat egg white till stiff

Gradually add sugar and vanilla. Beat it until it is the consistency of marshmallow fluff

Fold in chocolate then fold in coconut

 

Round by the tablespoon, on foil…

Bake 8-10 minutes

Be careful not to overcook them they get hard.
