EAST FALMOUTH – A new and unique snack is available at the Barnstable County Fair this year.

The StuffIt Banana is a frozen treat dreamed up by Dave Nunez and Diane Bouley of Northampton.

“We take a banana and we cut it in half and then we invented a corer and we core out the middle of the banana,” Nunez said. “Then we fill it with a flavor, whether it be peanut butter, fudge, butterscotch or strawberries. Then we dip it in dark chocolate. It’s a German dark chocolate that we have imported, and then we freeze it.”

The StuffIt Banana is also different from the usual fair food for another reason, according to Nunez.

“It is healthy. It’s all natural,” he said. “It’s beautiful. It’s great.”

Bouley said the idea and company came into being last year.

“Dave had an idea and it took off and we’ve done little, different things with it, but we are hoping to continue to expand,” she said.

The ultimate goal is to have the frozen treat, billed as “all natural,” available for retail.

“We just want to get our name out so people can know StuffIt Bananas and then, eventually, we are going to be in the stores so people can buy them all the time,” Bouley said.

Bouley said that visitors at the fair are usually hesitant to try the stuffed banana.

“When people pass and they read the sign they have a confused look on their face and then you talk to them,” she said. “We always have repeat buyers. Once you have one you always want to try the other flavors.”

This is the first food venture for the pair as Nunez is a carpenter and Bouley is a personal assistant.

“We’ve done other fairs but this is the biggest fair we have done so far, so we’ll see how that goes,” Nunez said.

The Barnstable County Fair continues through Sunday night with other fair food options and more entertainment.

The US Freestyle Motocross show highlighted the events of Monday night. Last night was the Demolition Derby.

There are also a number of featured musical performances including tonight’s Craig Wayne Boyd country show; Fran Cosmo, the former lead singer of Boston, takes the stage Friday night; and Three Dog Night headlines Saturday night.
